Grilled seafood with Coconut Curry

Surprise your family and friends with quick and easy grilled seafood skewers bursting with Thai flavors! 

Ingredients

  • 1 jar WATCHAREE’S Thai Coconut Curry Sauce

  • 1 lbs large fresh sea scallops

  • ½ lbs fresh shrimp

  • 1 red bell pepper, cut to small wedges

  • 1 bell pepper, cut to small wedges 

  • 1 yellow bell pepper, cut to small wedges

  • 1 medium red onion, cut to wedges

  • ½ small fresh pineapple, cut to small pieces

  • Skewers, soaked in water  

Preparation

  1. Clean scallops, remove white muscles and cut into halves if needed

  2. Rinse and peel the shrimp. Leave tails intact

  3. Alternate seafood and vegetables onto skewers

  4. Fire up the grill or bring a grill pan to medium heat. Spray with nonstick oil if needed. 

  5. Place seafood skewers on the grill, brush with coconut curry sauce, and cook until opaque for about 3-5 minutes, then turn over to cook the other side

  6. Brush with coconut curry sauce again and cook until all seafood and vegetables are cooked through.

  7. Remove from heat and drizzle sauce over skewers before serving.
