Watcharee’s Thai red curry sauce is inspired by Southern Thai cuisine with its liberal use of fresh turmeric, creating a distinctive hue. Red curry pairs well with tofu, chicken or beef, and any vegetable that you have on hand. My favorite combination is tofu, carrots, scallions, edamame, and chili peppers with noodles. Thai Red Curry Tofu Noodles
1 pouch WATCHAREE’S Thai red curry sauce
1 cup cubed extra firm tofu
1 package ready to eat Udon or any cooked noodles of your choice
½ cup shredded carrots
¼ cup edamame
1-2 scallions, sliced
1-2 fresh red chili peppers, for optional added heat
Put Thai red curry sauce in a pot over medium heat. A Japanese nabe pot or Korean stone bowl also works well.
Add noodles, tofu, edamame and carrots. For a thinner curry sauce, add water.
Bring to a boil, add scallions and optional chilies. Turn off the heat and enjoy!
